Today, I ordered a jar of Nikki's Coconut Butter in Macadamia Nut Cookie. The butter is gluten and dairy free and made with organic coconut.

I want to start focusing more of my attention on what I eat for breakfast. Lately, that hasn't been much of anything, maybe a banana or another piece of fruit. I really want to get more creative with my breakfast, while still keeping it healthy.
So in addition to trying some new things with Nikki's Coconut Butter, I am going to mix a variety of smoothies until I find one I really like.

Also this week, I am finally going to make Tina Haupert's Two-Ingredient Pancake (which she eats most mornings).
The pancake is simply made with an egg and a banana. Sounds easy enough.
