Courtney Caughey-Stambul: Trying some new things  

NEW CASTLE — Today, I ordered a jar of Nikki's Coconut Butter in Macadamia Nut Cookie. The butter is gluten and dairy free and made with organic coconut.

The plan is to make Paleo Macadamia Pancakes this week (or whenever my jar arrives). The recipe is posted on the Nikki's Coconut Butter website.  To read it, CLICK HERE.

I want to start focusing more of my attention on what I eat for breakfast. Lately, that hasn't been much of anything, maybe a banana or another piece of fruit. I really want to get more creative with my breakfast, while still keeping it healthy.

So in addition to trying some new things with Nikki's Coconut Butter, I am going to mix a variety of smoothies until I find one I really like.

Also this week, I am finally going to make Tina Haupert's Two-Ingredient Pancake (which she eats most mornings).

The pancake is simply made with an egg and a banana. Sounds easy enough.
