Courtney Caughey-Stambul: Giving thanks for care center feast

Thanksgiving is still a week away, but I've already enjoyed more than my share of the turkey, stuffing, and pumpkin pie.

This week, I visited Jameson Care Center in Neshannock Township to partake in their annual Thanksgiving dinner, which is prepared by the residents in the center's cooking club.

Approximately 20 residents, plus staff members, helped to create this year's meal, and what a meal it was! I couldn't believe the amount of food.

Many of the residents in the club peeled potatoes and chopped vegetables, while a few made their own special dishes to contribute to the dinner.

Jameson Care resident Mary Verdi bought supplies while on a shopping trip to make a colorful pepper salad that included salami, hot peppers, and cheese. Fellow resident Mary Martin took care of dessert, baking three sweet potato pies.

The star of every Thanksgiving dinner, the turkey, was roasted by Jameson Care Center chef Cosmo Bulisco.

My favorite dish was the candied yams. I probably could have eaten the entire pan myself. Good thing I was with company!

The decorations were all homemade from "recycled" materials. The table centerpieces consisted of hollowed-out pumpkins filled with flowers and pine cones. They were quite beautiful. I may have to steal the idea and make a larger version for my own dining room table.

During the evening, I had the pleasure of serving a few of the residents. Everyone was very gracious and I'm thankful that I was able to help out — and eat!
