Courtney Caughey-Stambul: Trying some new things
Today, I ordered a jar of Nikki's Coconut Butter in Macadamia Nut Cookie. The butter is gluten and dairy free and made with organic coconut. The plan is to make Paleo Macadamia Pancakes this week (or whenever my jar arrives). The recipe is posted on the Nikki's Coconut Butter website.

Yesterday, I prepared doughnuts from scratch for the first time. It was an adventure. I've always had a mini obsession with doughnuts. In college, I once gave a presentation on the past, present, and future of doughnuts.

'Tis the season for pumpkin- pumpkin pies, pumpkin spreads, pumpkin breads and much, much more. Yesterday, I went to Dunkin Donuts. I, like most of America (or so they say), run on Dunkin. I spiced up my normal cup of coffee with a shot of pumpkin flavor, then I went the extra mile and ordered a bagel with pumpkin cream cheese.

Happy Wednesday! I'm in a pretty good mood today as I just signed up for my first half marathon. I will be running the Pittsburgh Half on May 5, 2013, and I will be running for a reason. I am raising money for the Animal Rescue League (ARL) Paws Over Pittsburgh.
