Courtney Caughey: Stumped? Here are my dinner suggestions

NEW CASTLE — Not sure what to cook for dinner tonight?

Check out "What's For Dinner" on Yahoo's Shine.

"What's For Dinner," sponsored by Knorr Homestyle Stock, suggests meals for every night of the week. Just click on a meal and get the recipe.

Wednesday's dinner suggestion is Tofu with Thai Curry Sauce. It does seem to be one of the more unique dishes listed for the week, but if it sounds good to you, here's the recipe: http://shine.yahoo.com/channel/food/recipes/tofu-with-thai-curry-sauce-1898241/.

The recipe yields four servings, has 11 grams of protein and four grams of fiber per serving.

Thursday's suggestion sounds a little better to me. It's Tilapia with Grape Chutney. I do like Tilapia, but I've never had a chutney before. In fact, when I first saw the recipe, I wasn't sure what a chutney was, so I looked it up. It seems chutney is a spicy mixture with the consistency of jam. I guess a lot of people compare it to relish.

If you're not into the meals listed this week on Shine, I did find a recipe on the Food Network website that I think sounds delicious. It's my personal recommendation for tonight or Thursday night — or both!

I love crispy chicken tenders, so Food Network's Chicken Fingers with Curried Ketchup immediately caught my attention. The chicken fingers are dipped in an egg mixture, coated with bread crumbs and then baked. Yum!

Don't forget a vegetable to accompany your chicken. Broccoli is my favorite vegetable, just like the photo with the recipe. It was meant to be!
