Today, I am excited about lemon meringue pie and "Laura in the Kitchen." (http://www.laurainthekitchen.com)
I discovered Laura Vitale on YouTube and I have to say, she has some of the best instructional videos I have watched thus far in my cooking adventure. Yesterday, I watched her video, "How to Make Lemon Meringue Pie."
I love lemon meringue pie. The yummy dessert was invented in 1806 in Philadelphia by cooking school founder Elizabeth Coane Goodfellow (http://www.historycooks.com).
Laura Vitale's video on lemon meringue pie is full of helpful tips for baking. One note that I found especially interesting dealt with "blind baking" a pie crust. Vitale suggested laying the crust in the pan, covering the crust with aluminum foil and then pouring beans on top of the foil so the crust doesn't puff during baking. I had no idea that should be done!
