Lori Brothers on Healthy Living: Time to change your eating style


NEW CASTLE — Berry Crumb Cake

  • 2 1/2 cups all purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon pumpkin pie spice
  • 1 cup, plus 1 tablespoon low-fat (1 percent) milk
  • 3 egg whites
  • 4 tablespoons apple sauce
  • 1 teaspoon vanilla extract
  • 1 1/2  cups assorted fresh berries, such as blueberries, raspberries and blackberries
  • 1 tablespoon apricot preserves

Preheat oven to 350 degrees. Coat 8-inch round cake pan with cooking spray In bowl, combine 2 cups flour, 3/4 cup sugar, baking powder and 1/2 teaspoon pie spice. In separate bowl, combine 1 cup milk, egg whites, 3 tablespoons applesauce and vanilla; stir into flour mixture until combined. Transfer to pan Bake 12-15 minutes until edges just start to set. Meanwhile, combine remaining 1/2 cup flour, 1/4 cup sugar and 1/4  teaspoon pie spice; stir in 1 tablespoon apricot preserves and 1 tablespoon milk until crumbs form. Add berries Sprinkle fruit and crumb mixture over cake. Bake 35-40 minutes or until toothpick inserted into center comes out clean. Cool on rack.
