Culinary Conversation: Think globally, cook locally

NEW CASTLE — Another set of bookshelves might be necessary at my house very soon.

It’s been a bountiful week.

Edie Majesky of New Castle, who I have known most of my life, is aware of how much I love collecting old cookbooks. She was doing some spring cleaning and decided to hand over some cookbooks to me. What an unexpected and generous surprise.

The cookbooks are wonderful. One is an entire set that was published by Time Life Books and the theme is foods of the world. In addition to American cuisine, there is Japanese, Chinese, French, Italian, German — and I haven’t gotten to the others yet.

I thought it would be fun to share some I found in The Cooking of Scandinavia.

And it was also good to hear from Shirley Crowe, who has been a contributor to Culinary Conversation. She shared a recipe for apple clafoutis, which is noted for being a low-sugar treat.

Shirley explained that she placed more apples in the dessert than the recipe indicated. She also adds cinnamon for more flavor.

A co-worker told her it reminds her of bread pudding and others agreed.

“It also reminds you of a custard,” Shirley said. “This recipe is a keeper and I have baked many to share with my family. My son wanted to eat the whole one, but didn’t.”

Her sister tried the clafoutis with peaches and said it worked out well.

A final note — Shirley uses a round 9-inch cake pan in place of a tart dish.

And finally, a request.

Last week, at a fish dinner held at a church near where I live, I had one of the most delicious cookies I have ever tasted. It was a soft, sugar-like cookie with a light coconut flavor. It was tender and moist, and I have no idea what this cookie is called. Readers of Culinary Conversation, please help me find this recipe.
